I always enjoy pork collar as it has a very soft and tender texture that melts in the mouth. I love Vietnamese style pork collar with basil, simply delicious. Here is my own version of stir fry pork collar with basil.
Serving Size: 2 Adults & 2 Children
Preparation Time: 1 hour 10 minutes
Cooking Time: 5-8 minutes
Ingredients
1. Pork Collar - 200g
2. Sesame oil - 1 tablespoon
3. Fish Sauce - 1/2 tablespoon
4. Oyster Sauce - 1/2 tablespoon
5. Dark Soya Sauce - just a little for colouring as the salt content in fish sauce is high
6. Coriander Powder- 1/2 tablespoon
7. Dijon Mustard - 1/2 tablespoon
8. Chopped Basil - 50g
9. Unsalted Butter -25 g
10. Cooking oil - 1 tablespoon
Preparation Instructions
1. Slice pork collar into thin slices
2. Marinate pork collar with sesame oil, fish sauce, oyster sauce, light sauce, coriander powder and dijon mustard. Allow the pork to sit in the marinade for at least half an hour to 1 hour in chiller.
Cooking Instructions
1. Pre- heat pan on medium heat, with a tablespoon of cooking oil. Add chopped basil to oil.
2. Add the marinated meat into pan when basil start to give out its fragrance.
3. Stir fry meat till cooked, melt 25g of unsalted butter into pan and stir fry meat together for added flavour before serving.
