Ingredients
1. Pork bones - 250g
2. Old cucumber - 1
3. Dried scallops - 8
4. Goji berries - 2 tablespoon
5. Water - 2.5L
6. Red dates - 6-8 pcs
7. Salt to taste
Additional ingredients to enhance flavour of soup:
1. Dried cuttlefish (blanch in boiling water for 1 min, remove center soft bone, mouth and eye of cuttlefish)
2. Chinese peanuts with skin on (3 tablespoon)
3. Dried oysters (3)
Preparation / Cooking Instruction
1. Wash the old cucumber, cut into half and scoop out the seeds. Cut them into 2 inch cross sections.
2. Rinse red dates and goji berries. Set aside.
3. Blanch pork bone in a pot of boiling water for about 3 minutes, then rinse with cold water and remove visible blood clots.
4. Boil 2.5L of water, add pork bones, old cucumber. (Add your additional ingredients if you have at this point). When the water comes to boil again, turn down to low heat and let it simmer for 1-2 hours.
5. Add goji berries and red dates and let it simmer for another 15 minutes.
6. Try the soup, add salt if desired. Turn off heat.
Best served upon cooking.
Storage
Can be kept in chiller temperature of 3 to 5 degrees C for 3 days
