Ingredients
1. Chicken thighs - 4 pcs
2. Scallop powder - 2 teaspoons
3. Garlic - 2 cloves
4. Butter - 60g
5. Chicken stock - 150ml
6. Full cream milk - 150ml
7. Cream cheese - 15g
8. Lemon - 1 slice, cut into quarters
9. Cherry tomato - 3 whole, sliced
10. Spinach - 100g
11. Corn starch - 1 teaspoon, mixed with water
12. Chopped parsley - to garnish
Preparation Instructions
1. Marinate the chicken thighs with the scallop powder.
Cooking Instructions
1. In a large pan, melt the butter. Stir in the garlic until fragrant.
2. Place the chicken thighs in the pan to lightly brown.
3. Add in the chicken stock, milk, and cream cheese.
4. Cover the pan to allow the chicken thighs to fully cook.
5. Once the chicken thighs are fully cooked (no pink juices flowing out), add the rest of the ingredients.
6. Simmer until it is slightly thickened.
Serve while it is hot.
Suggestion
This recipe can be done with a pressure cooker. Cook on pressure mode at 5 mins at step 3 and cook on sauté mode when adding the rest of the ingredients.
Nutrition Tip
Make this recipe lighter by removing the skin from the chicken thighs, and using low-fat milk instead of full cream milk.
Storage
Can be kept in the fridge for 1-2 days.
