Ingredients
1. Prawns - 12 large
2. Light soy sauce - 1.5 tablespoons
3. Butter - 50g
4. Garlic - 8 cloves, minced
5. Cooking oil - 3 tablespoons
6. Spring onion - 2 stalks, chopped
7. Coriander - 1 stalk, chopped
8. Tanghoon/Vermicelli - 1 bundle
Preparation Instructions
1. Soak the vermicelli in water for 30 minutes to soften.
2. With a sharp knife, slice the prawns in half topside, but not all the way through and remove the veins.
3. Season the prawns by mixing with the soy sauce. Set aside.
Cooking Instructions
1. In a frying pan, heat up 2 tablespoons of oil and fry half of the garlic for 2 minutes. Be careful not to brown them. Remove from heat.
2. Mix the cooked garlic and the raw garlic with the butter to form a compound butter. Set aside.
3. Prepare a steaming pot.
4. Place the vermicelli on a steaming dish.
5. Stuff the prawns with the garlic butter and lay on top of the vermicelli.
6. Put the dish to steam on high for about 4-5 minutes or to your desired doneness.
7. Heat up the remaining 1 tablespoon of oil until bubbling slightly.
8. Garnish the prawns with spring onion and coriander and drizzle the hot oil over.
Serve while hot.
Storage
Can be kept in the fridge for up to 1 day.
