Ingredients
1. Pumpkin, 300g
2. Pork belly, 500g
3. Chinese sausage, 1 pair
4. Dried mushrooms, 3-4 pcs
5. Dried shrimps, 50g
6. Rice, 1 ½ cups
7. Water
8. Chopped garlic, 1 tablespoons
9.Salt, ½ teaspoon (pork) 1 teaspoon (rice)
10. Pepper, 1 teaspoon
11. Cinnamon powder, ¼ teaspoon
12. Abalone sauce, ½ tsp (pork) 1 tsp (rice)
13. Cooking oil, 2 tablespoons
14. Sesame oil, 1 teaspoon
Garnish / Sauces
1. Fried shallots, 1 tablespoon
2. Spring onions, 1 tablespoon
Preparation Instructions
1. Cut pumpkin into cubes.
2. Slice pork belly into bite size chunks. Marinate with salt, cinnamon powder, abalone sauce, corn starch. Mix well.
3. Cut Chinese sausage into thin slices.
4. Soak dried mushrooms and cut into thin slices.
5. Soak dried shrimps and slightly smash.
6. Rinse the rice. Prepare water for cooking the rice, but a slightly lesser amount than normal.
Cooking Instructions
1. Heat up a non-stick frying pan with cooking oil and sesame oil. Add in chopped garlic. Fry till fragrant.
2. On medium heat, add in dried shrimps, sliced mushrooms, cook for 1 minute.
3. Add in sliced Chinese sausage, cook for 1 minute.
4. Add marinated pork, and fry till pork is cooked.
5. Add in pumpkin cubes and rice.
6. Add salt, pepper, abalone sauce. Add in water. Mix well.
7. Cover the frying pan and reduce to low heat. Cook for about 20 minutes, or until the rice is fully cooked. You may transfer it to the rice cooker.
Top with garnishes and serve while hot.
