Inspired by the mint yogurt dips usually served in Indian restaurants, I created this unique sauce that is simple, light, and healthy. The combination of grilled spiced chicken and a cooling, refreshing dip is perfect!
Serving size: 3 servings
Ingredients (A)
1. Chicken drumlets, 12 pieces
2. Ginger paste/Minced ginger, 1 teaspoon
3. Oyster sauce, 1 teaspoon
4. Salt, 1 teaspoon
5. Pepper, half teaspoon
6. Paprika spice, 1 teaspoon
7. Corn starch, 1 tablespoon
Ingredients (B)
1. Natural yogurt, 3 tablespoons
2. Mayonnaise, 1 tablespoon
3. Sesame sauce, 1 teaspoon
4. Chopped mint leaves, 1 tablespoon
5. Chopped coriander, 1/2 teaspoon
6. Salt to taste
Preparation / Cooking Instructions
1. Rinse chicken with water and pat dry with paper towels.
2. In a big bowl, put in chicken drumlets and marinade ingredients (A). Mix well. Leave it in the fridge to marinate for at least 1 hour.
3. In a separate bowl, combine all the ingredients (B) for the mint yogurt dip. Mix well.
4. Preheat the oven / air fryer at 190 degree C.
5. Grill drumlets for 7-8 minutes on each side
6. Transfer the grilled chicken to a plate.
7. Serve while it is hot with the cold dip.
Best served upon cooking
Storage
Transfer to a container and store in the fridge for 2-3 days.
Suggestion
Dip can be used with other dishes like fried fish, BBQ meat etc.
