Ingredients
1. Broccoli - 200g
2. Scallops - 6-8 (180g)
3. Carrot - 1 Medium
4. Oil - 2 tablespoon
5. Garlic clove - 2
6. Shiitake mushroom - 4
7. Oyster sauce - 2 tablespoon
8. Ground white pepper - 1/2 teaspoon
9. Cornflour - 1/2 teaspoon
Preparation / Cooking Instruction
1. Broccoli - trim ends and separate to smaller florets
2. Carrot - peeled and sliced.
3. Garlic cloves - peeled and chopped into small bits.
4. Shiitake mushroom - slice them. If you used the dried ones, soak it in water for 15minutes at least and slice them.
5. Blanch broccoli for 3-4 minutes in boiling water. Drain and put it aside.
6. Add oil in hot pan, add chopped garlic and fry until fragrant, before turning brown.
7. Add mushrooms and water used to hydrate them. Bring to boil. Add oyster sauce and allow it to simmer for 3 minutes.
8. Add scallops and sliced carrot and bring the gravy to boil. Allow it to simmer for 2 minutes. Stir in drained broccoli back into the pan. Add salt and white pepper to taste. Stir cornflour and 2 tablespoon of water into a mixture and add it into the pan to thicken the gravy. Turn off heat.
Best served upon cooking.

Can be kept in chiller temperature of 3 to 5 degrees C for 3 days
